Kashmiri Mutton Rogan Josh


Mutton Rogan Josh is a mouth watering mutton dish cooked with various spices.This dish belongs to Kashmiri cuisine. This is one of the main dish in Kashmir and India also but Indian people make it slightly in different way. Here I am sharing the Kashmiri Recipe which I will make using various types of spices. It is full of taste with a beautiful aroma. 


Mutton Rogan Josh


Preparation for 6 People.

Ingredients: 

Mutton                         1 KG.
Lemon Juice                  2 table spoon
Salt                               2 table spoon
Green Cardamom         6 piece
Black Cardamom          4 piece
Cinnamon                      2 long sticks
Jayitri (Javitri/mace)        few
Mouri (Sauf)                  2 tea spoon
Ginger paste                   3 table spoon
Red chilli powder           1 & half table spoon
Cumin Powder (Zeera)   1 tea spoon
Ghee                              4 table spoon
Saffron                           Half tea spoon

Making Process:

1. Cut and wash mutton into fine pieces. Then Marinate this with lemon juice and 1 table spoon salt and keep it in fridge for 30 minutes.
2. Put green cardamom, cinnamon, Jayitri & mouri in a blender and make powder of these ingredients. Do not add water in this.
3. Mix ginger paste, red chilli paste/powder and cumin powder in a bowl adding 2 cups of water and keep it aside.
4. In a pan put ghee and when it will melt add black cardamom. Stir it for a minute put those marinated mutton, stir little and cover it. Cook it on medium heat until the oil comes out. It will take a bit long time.
5. When you will see oil has come out from the mutton you will add the ginger paste mixture, saffron and 1 table spoon salt and 4 cups of water in it. Then stir it and cover the pan. Cook it in medium heat for 45 minutes.
6. After 45 minutes, remove the cover and put the green cardamom, cinnamon, Jayitri & mouri powder in the mutton and stir it well. Then cover the pan for another 30 minutes in medium heat.
7. After 30 minutes, a layer of oil will be visible and that indicates "the end" of cooking. Turn off the stove and serve it hot.
