Chicken Fried Rice


Chicken Fried Rice is an easy-made food and loved by all. It can be accompanied with any type of gravy chicken or beef or vegetable. Last time I cooked chicken fried rice which I served with honey chicken. Here is the recipe for you.


Chicken Fried Rice


Preparation for 6 people.

Ingredients:

Polau Rice (chinigura)          4 cups
Onion paste                           2 table spoon
Ginger paste                         2 table spoon
Garlic paste                           1 table spoon
Soya source                            4 table spoon
Carrot (shredded)                 1 cup
Cowpea (chopped)                 1 cup
boiled Chicken (shredded)    1 cup
Olive oil/vegetable oil       
Butter                                       1 table spoon
Salt                                            1 table spoon
Black pepper powder             2 tea spoon
Green Chilli (chopped)           5/6
Boiled water                            7 cups

Making Process:

1. Wash the rice and drain all water.
2. In a big rice cooking pan (hari) take oil. heat it little then turn off the heat.
3. Now add rice, salt, onion, garlic, ginger paste, soya sauce, carrot, cowpea, boiled chicken, black pepper, green chilli in the pan and mix it well on low heat. stir it for few minutes.
4. Than add boiled water with rice, stir and cover the pan. Put the heat on medium high-lever.
5. After few minutes, remove the cover to see whether all waters dried up or not. When there will be little water spread a butter on the rice, stir a little and low the heat to the minimum level. You can put a tawa under the hari so that the below portion of the rice doesn't get burnt.
6. Keep it like that for minimum 10 minutes or more. Then serve it hot.

Vegetable Pakora


Vegetable Pakora is a healthy and delicious snacks item that you can make for your kids and other members at evening time. This is very easy to make a tasty. 


Vegetable Pakora


Preparation for 4 people.

Ingredients:

Egg                                 1 whole
Flour                              5 table spoon
Red chilli powder          2 tea spoon
Salt                                 1 tea spoon
Black pepper powder   Half tea spoon
Potato grated (Big)       1  (Small 2)
Cowpea (বরবটি)               4/5 piece
Onion (grated)               2 whole
Carrot (grated)              Optional
Vegetable Oil

Making Process:

1. In a bowl take an egg, flour, red chilli powder, salt & black pepper powder. Mix it well
2. With the above mixture, mix Cowpea, onion and potato. 
3. In a pan take 2 cups oil and put small balls of that mixture to fry. Fry it in medium heat.

4. Serve it hot with tomato sauce.

Rosho Golla


Rosho golla is one of the loved dessert in Bengal. These sweets are so soft and spongy that when you pour it in mouth it will disappear like candy floss and every time I say, homemade foods are the best! You can make it at home very easily with the assurance of fresh and good quality.

Preparation for 16 Pieces.

Rosho Golla


Ingredients:

Full Fat Milk       1 liter (Filtered)
Lemon Juice       1 cup 
Sugar                   2 & half cups
Flour

Making Process:

1. Take milk in a pan and give it a boil. Then turn off the stove to make it cold.
2. Add lemon juice in the milk and you will see lumps curd floating on greenish color of water.
3. Take a clean thin piece of cloth on a bowl and pour those curd on it. The piece of cloth will hold only those curds removing water. Tie up that cloth and wash it in cold water to remove lemon smell.
4. Soak the cloth full of curd a little and hang it on for minimum 2 hours. This is to remove all water from the curd.
5. After 2 hours bring down the piece of cloth and open it. you will find a dine doe of curd. 
6. Smash the doe with your hand for few minutes than put it in blender for few seconds. Than it will take a texture of cream. 
7. Now take a big flat plate, place those curd on that plate and add flour with the curd. Keep adding flour as long as it makes a nice & hard doe. When you will see that the doe is not sticking with your hand, you will understand that the doe is ready for sweet.
8. make small does. There will be 16 to 17 does in a liter of milk. Do not make big does because it will get bigger when mixed with sugar syrup.
9. Take a pressure cooker and fill it with 5/6 cups of water and add 1 cup of sugar. Bring a boil and leave those does in it. Than cover the pressure cooker and cook it for 5 minutes/1 siti.
10. Meanwhile, on another pan take two cups of water and add 1 & half cups of sugar to make sugar syrup.And after a boil turn off the stove to make the syrup cold.
11. After 5 minute turn off the stove and keep it like that for 10-15 minutes to release the pressure. Than open the lid and put it under fan to make the temperature normal. 
12. Lastly, transfer those sweets in the cold syrup and keep it in fridge when it comes down to room temperature. Serve it cold.

Bashmati Rice Plain Polau


Plain Polau made from long grain bashmati rice is better than any other plain polau. It looks beautiful, spreads a nice aroma and tastes best with mutton or beef curry. My process is very easy. You can make it anytime for your kids and other family members just to bring a change in your regular lunch or dinner menu. Here is the recipe for Bashmati Rice Plain Polau.


Bashmati Rice Plain Polau


Preparation for 6 People.

Ingredients:

Bashmati Rice                        4 cups
Liquid milk                             1 cup
Onion & green chilli paste    2 table spoon
Ginger paste                           1 tea spoon
Garlic paste                             1 tea spoon
Ghee                                        4 table spoon
Oil                                            4/5 table spoon
Salt                                          1 & half table spoon
Boiled water                           6 cups

Making Process:

1. Wash the rice and drain all water.

3. Now add rice, salt, onion & chilli paste, garlic and ginger paste in the pan and mix it well on low heat. stir it for few minutes.

Kashmiri Mutton Rogan Josh


Mutton Rogan Josh is a mouth watering mutton dish cooked with various spices.This dish belongs to Kashmiri cuisine. This is one of the main dish in Kashmir and India also but Indian people make it slightly in different way. Here I am sharing the Kashmiri Recipe which I will make using various types of spices. It is full of taste with a beautiful aroma. 


Mutton Rogan Josh


Preparation for 6 People.

Ingredients: 

Mutton                         1 KG.
Lemon Juice                  2 table spoon
Salt                               2 table spoon
Green Cardamom         6 piece
Black Cardamom          4 piece
Cinnamon                      2 long sticks
Jayitri (Javitri/mace)        few
Mouri (Sauf)                  2 tea spoon
Ginger paste                   3 table spoon
Red chilli powder           1 & half table spoon
Cumin Powder (Zeera)   1 tea spoon
Ghee                              4 table spoon
Saffron                           Half tea spoon

Making Process:

1. Cut and wash mutton into fine pieces. Then Marinate this with lemon juice and 1 table spoon salt and keep it in fridge for 30 minutes.
2. Put green cardamom, cinnamon, Jayitri & mouri in a blender and make powder of these ingredients. Do not add water in this.
3. Mix ginger paste, red chilli paste/powder and cumin powder in a bowl adding 2 cups of water and keep it aside.
4. In a pan put ghee and when it will melt add black cardamom. Stir it for a minute put those marinated mutton, stir little and cover it. Cook it on medium heat until the oil comes out. It will take a bit long time.
5. When you will see oil has come out from the mutton you will add the ginger paste mixture, saffron and 1 table spoon salt and 4 cups of water in it. Then stir it and cover the pan. Cook it in medium heat for 45 minutes.
6. After 45 minutes, remove the cover and put the green cardamom, cinnamon, Jayitri & mouri powder in the mutton and stir it well. Then cover the pan for another 30 minutes in medium heat.
7. After 30 minutes, a layer of oil will be visible and that indicates "the end" of cooking. Turn off the stove and serve it hot.

Honey Chicken


Honey Chicken is a delicious chicken item loved by all. It tastes sweet and can be paired with fried rice. This food item is very easy to make. Here is the recipe of Honey Chicken.

Honey Chicken with Fried Rice


Preparation for 4 people.

Ingredients:

Boneless chicken breasts    2 piece
Butter                                2 table spoon
Vinegar                              1 table spoon
Soya Sauce                       4 table spoon
Honey                               3 table spoon
Corn starch                       1 table spoon
Sesame oil                         2 tea spoon
Red pepper Flakes            1 tea spoon

Making Process:

1. Cut those boneless chicken into cube chunks, boil them in water. Then remove water and keep them aside.
2. In a pan, put butter and fry those  chicken cubes in butter till it turns slight red. Sprinkle a pinch of salt. Then take off those chicken in a plate.
3. On the same pan add soya sauce, vinegar, honey, sesame oil and red pepper flakes in low heat and stir continuously.
4. Add chicken chunks into the sauce and stir a little. Then add corn starch.
5. Stir a little then turn off the stove.
6. Serve hot.

Cream of Chicken Soup

This is a thick and creamy chicken soup which is full of taste and love. Everyone in your family will love it moreover this is very healthy for kids. This rich soup can be served in parties. This is my favorite soup and I love to make this soup for my family members and guests. Cream of Chicken Soup is available in some big restaurants in my city and they take lot of money for only a cup of soup. Therefore, I sharing this recipe with you so that you can save expanses, make it and eat it fresh. After all, Best Foods are Made in Home!


Cream of Chicken Soup


Preparation for 6 People.

Ingredients:

boiled Chicken Shredded                    1 cup
boiled Chicken Shredded for blend   1/2 cup
Butter                                                   4 table spoon
Flour                                                     4 table spoon
Milk                                                       2 cups
Chicken Stock                                      3 cups
Black Pepper Powder                        1 tea spoon
Parsley flakes                                      1 tea spoon
Cream                                                  5 table spoon
Salt                                                       1 tea spoon
Sugar                                                    1 tea spoon

Making Process:

1. Put half cup boiled shredded chicken and  1 cup cold water in a blender and blend it until it turns into liquid form. Then keep it aside.
2. In a pan (korai) put butter in low heat ans stir until it melts down.
3. Then mix flour in it and stir well so that it does not make any lumps.
4. Add milk, chicken stock, cream, salt and sugar one by one and keep stirring.
5. Add blender chicken, black pepper powder, parsley flakes and shredded chicken.
6. Keep stirring until it gets medium thick. Then turn off the stove.
7. Serve it hot.  
 

Mushroom Sandwich

For Mushroom lovers here is a sandwich with full of mushroom that will give your taste buds a creamy tour. It is very easy to make. Member in my family just loves this sandwich. Here I am sharing this recipe for you.


Mushroom Sandwich

Preparation for 5 People.

Ingredients:

Chopped Mushroom   1 cup
Chopped Capsicum     1/2 cup
Chopped Onion            1/2 cup
Butter                            2 table spoon
Salt                                 1/2 tea spoon
Red pepper flecks        1/2 tea spoon
Black pepper powder   1/2 tea spoon
Mozzarella cheese
Bread                              5 piece 



Making Process:

1. Boil Chopped mushroom, capsicum and onion.
2. After boiling remove hot water and wash it in clod water and keep it aside for draining water.
3. Take butter in a pan. Keep the heat medium.
4. When the butter melts put boiled mushroom, capsicum and onion. keep stirring.
5. Sprinkle salt, black pepper powder & red pepper flecks on the mushroom and stir it well. When it will get reddish in color, turn off the heat.
5. Take a bread piece and spread butter on it. Cut the bread into two pieces. Then spread the mushroom mixture on the bread and on the top of the mushroom mix put some melted cheese and cover it with another slice of bread to make a sandwich.
6. In this way make more sandwiches pouring with the mushroom mixture and serve. You can use sandwich maker to make this sandwich.

Chicken Tetrazzini

This is a mouth watering spaghetti and chicken dish which is also full of butter cream and cheese. I first found and tasted this food in a restaurant and paid lot of money for this. Although this food was expensive but it was worth eating. When I tangled the fork with some spaghetti then pour it in the creamy chicken sauce and fill it in my mouth, it felt like heaven! With some knowledge from them and some of mine, I made this food at home and here I am sharing this recipe with you!


Chicken Tetrazzini


Preparation for 5 People.

Ingredients:

Butter                           4 table spoon
Flour                             4 table spoon
Milk                               1 cup
Chicken Stock               1 cup
Cream                            4 table spoon
Salt                                 1 tea spoon
Sugar                              1 tea spoon
Black pepper powder   1 tea spoon
Dry parsley flakes         1/2 tea spoon
Boiled chicken cube      1 cup
Boiled mushroom          1/2 cup
Boiled Spaghetti           1 Packet
Red pepper flakes 
Mozzarella cheese
Vegetable oil/Olive oil

Making Process:

1. Boil spaghetti and keep it aside in a basket to remove water completely.
2. To make sauce, take a pan and put the butter. keep the heat low.
3. When the butter melts put flour and stir it continuously so that it doesn't make any lumps.
4. Then put a cup of milk and stir. Mix it well.
5. After 30 seconds, put cream on it and keep stirring.
6. Then one by one mix chicken stock, salt, sugar, Black pepper powder, Dry parsley flakes, Boiled chicken cubes & Boiled mushrooms. Stir the sauce till it gets thicken. After it gets Medium Thick turn off the heat.
7. Take those spaghetti and mix some vegetable oil/olive oil, a tea spoon salt and red pepper flakes according to your taste. 
8. put it on stove in low heat or if you have electric oven, put it on oven after serving it on plate and grate Mozzarella cheese on it. Heat the spaghetti for 30 seconds in oven.
9. Then put some sauce on the other side of the plate and serve.
10. It will be served per-plated.

Sweet Potato Roll

It is a mouth watering food in which you will find potato in sweet character! This food item can be served as snacks. Easy to make and loved by all. 




Sweet Potato Roll



Ingredients: 

Doe Making:
1. Butter
2. Egg   1 Whole
3. Flour
4. Salt

For Filling:
1. Potato
2. Sugar Caramel
3. Cheese

Making Process:

1. From the doe make small breads (It will be size of finger roll)
2. Cut potato into cubic size and boil them in water until it gets tender
3. After boiling drain water and in another pan put some sugar and make caramel out of it.
4. Put those potatoes into caramel and mix it well
5. Fill the small bread with caramelized potato and cheese
6. Roll it and fry it deep
7. Serve it hot
